In 2008, the Medical Center - Diabetes and Endocrinology Research Center of Columbia University try to lessen the inflammation of insulin resistance, diabetes mellitus symptoms both of which are caused by obesity using the strong anti-inflammation and anti-oxidation curcumin on rat testing. The result shows that curcumin can improve rat diabetes due to lack of leptin and obesity caused by high fat diet.
 
The researcher find the curcumin can significantly reduce Macrophages of White adipose tissue and the activity of hepatocyte nuclearfactorκB (NF-κB) and the risk of liver inflammation and hepatomegaly, increase Adiponectin of adipose tissue.
 
Therefore, the final result of the research is that curcumin can control the sugar level in blood and cure the relative obesity problem like inflammation and disorder metabolism both of which caused by type 2 diabetes of rat.
In the animal experiment of Tufts University in Boston, USA, rats are divided into 3 groups, and are fed with low fat, high fat, and curcumin respectively. The result indicate that both body fat and weight of the group fed with curcumin are decreased even without limiting food intake, besides, blood sugar, cholesterol, fatty acids, triglycerides and the index of fatty liver are reduced; The result present that curcumin do prevent the rat weight and body fat from increasing.
 
On Chinese medicine, Traditional Chinese Medicine Department of Changchun University do animal test on research if the curcumin can enhance the metabolism problem and inflammation  fatty infiltration of liver and inflammation problem. They found that the production and cumulating of lipid is decreased, and the shape of cells is improved after they fed rats with curcumin. Additionally, curcumin can bring down inflammation factor TNF-αIL-1βIL-6IL-10MCP-1 in liver and activity of gene IFN-gamma and protein NF-kappaBF4/80, then conclude that curcumin can reduce the inflammation caused by obesity.

薑黃的醫學史,可上溯5千年之久,在5千年前古印度的阿育吠陀醫學系統裡,薑黃是用在傷口復原、血液淨化以及胃部疾病的主要藥劑。
 
現代醫學的薑黃應用,美國醫學論文系統(PubMed)中第一篇有關薑黃素生物活性研究的報告於1970年出版,研究薑黃素對大鼠膽固醇含量的影響;截至2015年9月,已達到5192篇相關的科學論文發表,屬於多酚類化合物的薑黃素,具有抗發炎、抗氧化、清除自由基、抗癌、心血管保護等作用。並且被認為具有潛力,可被開發為癌症、糖尿病、高血脂、心臟病、關節炎、皮膚病、阿茲海默症及多種慢性發炎疾病的治療藥物。
 
現代人常攝取含化學添加物的食品、作息不定、缺乏運動、常坐冷氣房,促使生理代謝不良,形成肥胖或代謝症候群之現象。代謝症候群並非一種疾病,而是一種「病前」的症候群。簡單說起來,它包含了「三高一胖」,也就是血壓高、血糖高、血脂高和腹部肥胖。這些異常雖然未達傳統需要治療的門檻,但卻代表著許多危險因子的集合,更是影響日後罹患高血壓及糖尿病的重要危險因子。
 
2014年初「癌症是一種新陳代謝疾病」的假設得到印證,由台灣衛生研究院龔行健院長、清華大學王雯靜教授等研究團隊,發表登於國際頂尖期刊≪美國國家科學院刊≫。
 
這項發現不僅為癌症治療開啟新的里程,此一全新觀念的提出,更提醒民眾維持人體新陳代謝正常運作的重要性,透過均衡飲食及運動對癌症的防治,將是非常重要的指引。
 
薑黃素對於促進代謝及相關作用的機轉,近幾年研究與應用在臨床上,顯著的成果。
 
2008年哥倫比亞大學醫學中心-糖尿病和內分泌研究中心,利用具有強力抗發炎與抗氧化作用的薑黃素進行小鼠實驗,試圖改善肥胖小鼠引發的胰島素抗性發炎反應與糖尿病病徵的發生。實驗結果發現,薑黃素可改善高脂飲食引發的肥胖及瘦素缺乏的糖尿病小鼠。
 
亦發現到薑黃素能顯著減少白色脂肪組織中的巨噬細胞、增加脂肪組織的脂聯素、降低肝細胞核因數κB活性(NF-κB)、降低肝臟發炎的發生與肝腫大風險。
 
因此,此研究結論為薑黃素的攝取能回復第2型糖尿病的小鼠所引發的肥胖相關發炎反應和代謝紊亂問題,並改善血糖控制。
 
美國波士頓塔夫茨大學 (Tufts University)進行的動物實驗中,分成3組實驗組別的老鼠,分別餵食低脂、高脂和薑黃素飲食。結果發現,薑黃組的組別在食物量無限制的情況下,體脂和增重方面還是都有減少,且在血糖、膽固醇、脂肪酸、三酸甘油酯和脂肪肝的指數方面也呈現下降;顯示薑黃素(Curcumin)的確能減少老鼠體重和體脂肪的增加。
 
在中醫方面,長庚大學中醫學系進行的動物實驗,利用薑黃針對因肥胖所造成的肝臟脂質浸潤與發炎現象,觀察是否會改善代謝與發炎的情形與其調控和變化。實驗結果發現在給予小鼠薑黃後,有減少脂質的合成、堆積和改善細胞型態的效果。薑黃也可降低肝內發炎因子TNF-α、IL-1β、IL-6、IL-10、MCP-1及 IFN-gamma的基因表現與NF-kappaB、F4/80的蛋白質表現,進而證實薑黃可以減輕肥胖所造成的發炎反應。
